Contrary to its name, this is not a true sea bass, but rather a member of a family that only occurs in the southern seas; in depths from 800 to 1700 meters. Commercial catches of Chilean Sea Bass generally come from Chile, Argentina, Peru, Ecuador and recently South Africa.

 

Chilean Sea Bass average in size form 5 up to 30 pounds for a whole fish, commercially it is available in H&G form (headed & gutted) or fillets.

 

This fish has high fat content, which gives it a delicious flavor and great versatility. It is an outstanding grilling fish; but it is also well suited for baking, broiling or sautéing. It mixes well with a variety of flavors but it can also stand on its own.

 

The meat is of a firm but tender consistency and of an off-white hue that turns pearly white when cooked.

 

Chilean Sea Bass is an excellent source of omega-3 fatty acids – about 1g per 4 oz. Serving – and protein, about 18g.

 

In Chile, the fish is known as “Bacalao de Profundidad” (Cod of the depths).
